Quick Microwave Egg Omelet

Ingredients:

1-2 eggs

1/4 cup chopped vegetables (onion, spinach, bell pepper, mushroom, etc.)

1 tbsp cheese

Salt and pepper


Instructions:

1.)    Spray microwave save bowl with cooking spray

2.)    Dice all veggies and add to bowl

3.)    Add eggs and mix well to combine

5.)    Microwave on high for 2 minutes

6.)    Be careful when removing from microwave, bowl may be very hot.

7.)    Check for doneness- tilt bowl on side, if raw egg runs down, microwave for additional 20-30 seconds. Eggs should be firm.

8.)    When done, sprinkle with cheese. Optional, top with salsa, chile, or sour cream.


Notes: Frozen vegetables can be used in place of fresh. Microwave frozen veggies first until cooked, then combine with eggs and microwave again.
